Oh for the Love of Sugar (Reduction!)

While some might argue how one can never have too much sugar, those on the opposite spectrum are in for a sweet treat. According to Nestlé, the Swiss food company discovered an approach to reducing sugar in its chocolate bars by up to 40% without altering the flavor.

A Sweet Balance

The creators of Kit Kats, Aeros and Yorkies plan on structuring the sugar in a new process where the sugar will dissolve faster. So, even when less is used, the tongue recognizes an equal level of sweetness. The company plans on running with this new production method starting in 2018 and plans to patent the technology.

“This truly groundbreaking research is inspired by nature and has the potential to reduce total sugar by up to 40% in our confectionery,” said Stefan Catsicas, chief technology officer, Nestlé. “Our scientists have discovered a completely new way to use a traditional, natural ingredient.”

How Much Sugar is Reduced?

The following is the amount of sugar the chocolate bars currently contain in comparison to the amount they will contain once 40% of sugar is cut:

  • Kit Kat: 23.8 grams vs. 14.3 grams
  • Yorkie: 26.9 grams vs. 16.1 grams
  • Aero: 24.9 grams vs. 14.9 grams

In response to the obesity epidemic, Action on Sugar was launched in 2014 to encourage manufacturers and government to cut sugar in food by 30%, which also urges confectionery companies such as Nestlé to eliminate any unnecessary sugar from their products.
