Comax Flavors (Melville, New York) has launched a stevia-masking flavor as an addition to its line of “special effects” flavors. The new flavor overcomes the bitterness caused by stevia, while deflecting the lingering or clinging sweetness that interferes with the enjoyment and acceptability of the finished product. Largely focused on the beverage and bakery applications, Comax’s new product can be customized to meet specific applications across other segments.
