Raw Material of the Week: Coffee Blossom Honey Blend

Treatt has introduced coffee blossom honey blend (CAS# 872045-21-1), a Vietnamese coffee blossom honey blended with other natural honeys.

The material imparts a honey flavor to food and beverage systems without adding sugar or calories. Additionally, it has a colorless to pale straw appearance with odor and flavor characteristics comprising of dark roasted coffee and chocolate flavor and aroma with brown sweet undertones.

Focusing on the sweeter side, honey can reveal a wide range of notes from various flowers to animalic and leathery notes in addition to woody, piney and even smoky notes.

A Blossoming Ingredient

In the flavor world, coffee consumption remains active and steady. The iced coffee/​cappuccino segment experienced sales increases of 17% year-to-date to $1.​8 billion in 52 weeks, ending May 15, 2016, according to IRI data.

Coffee is also seeing a growth in fine fragrances. A white flower, coffee blossom offers a deep balsamic undertone and floral notes of mimosa, narcissus and beeswax. Additionally, it is available as a side production of coffee beans, which provides a sustainable option for perfumery as labor tends to remain stable and offers income when coffee prices are low.
