This material occurs naturally in cocoa, malt, potato chips, and roasted peanuts. 5-Methyl-2-phenyl-2-hexenal offers rich brown and cocoa bean notes that can be used to deepen chocolate, coffee, honey, and roasted nut flavors. It works well in concert with other chocolate ingredients. This material can also add creamy cocoa notes in fragrances. It is recommended for use at levels of 1–10 ppm for a cocoa aroma and flavor.
