Known for its healthy properties, citrus flavors are some of the most popular flavors around the globe. During Flavorcon 2018, the flavor industry will take a deeper dive into this coveted fruit with a presentation from Richard Pisano, Jr., president of Citrus and Allied Essences Ltd.

During his presentation, “Novel Citrus Varieties, Their Individual Flavor Profiles and Uses,” Pisano will discuss trends and uses of citrus flavor, including the emergence of clementine, yuzu, tarocco, Moro blood oranges and Tardivo di Ciaculli mandarins as popular alternatives to traditional citrus flavors. In addition, he will explore several lesser known citrus profiles and their applications.
