Pitch submissions now open | Manuscripts due December 2026

For the February 2027 issue of Perfumer & Flavorist+, we’re seeking expert pitches for educational, technically focused articles exploring the challenges and solutions shaping savory flavor development, from sodium reduction and clean-label reformulation to flavor modulation, alternative proteins and processing stability.

We’re particularly interested in practical insights that help flavor chemists and their product development colleagues understand ingredient functionality, overcome formulation hurdles, improve sensory performance and create more authentic, multidimensional savory profiles.

What We Want From Contributors

We’re looking for educational, evidence-based content—not promotional articles.

Strong pitches will offer practical value to flavor chemists, application scientists, food technologists and other product development professionals.

Topics We’re Seeking

Managing Spice Levels in Flavor Development

Explore the science of heat perception, the challenges of balancing pungency with flavor complexity, and strategies for managing intensity, persistence and sensory balance across food applications.

Making Flavor Modifiers Work Across Different Food Matrices

How do fat, protein, pH, moisture and other formulation variables influence the performance of flavor modifiers? We’re looking for insights into matrix effects, application-specific challenges and approaches to optimizing performance.

Reducing Sodium Without Losing Savory Impact

Examine strategies for maintaining saltiness, umami, mouthfulness and overall flavor intensity in reduced-sodium formulations. What roles can flavor enhancers, taste modifiers and other ingredients play—and where do limitations remain?

Achieving Clean-Label Objectives Without Sacrificing Performance

How can product developers meet clean-label objectives while maintaining flavor impact, consistency and consumer acceptance? We welcome discussions of ingredient functionality, formulation trade-offs and the particular challenges of smoke flavors.

Masking Off-Notes in Plant-Based and Alternative Proteins

Explore approaches to managing beany, grassy, bitter and other undesirable notes in alternative protein applications. We’re also interested in the challenges of controlling lingering aftertaste, managing bitterness and achieving sensory balance without compromising desirable flavor characteristics.

Building Authentic, Multidimensional Savory Profiles

Go beyond basic umami to examine the ingredients and formulation strategies that contribute to depth, complexity, mouthfulness and persistence. How can flavorists build more convincing roasted, grilled, meaty, broth-like and other savory profiles?

Delivering Savory Flavor Performance Through Processing and Shelf Life

What happens to savory flavor systems during cooking, extrusion, retorting, drying and other processing conditions? Explore flavor stability, degradation, off-note formation, ingredient interactions and strategies for maintaining sensory performance throughout shelf life.

New and Notable Savory Ingredients for the Flavorist’s Toolbox

Highlight emerging or underexplored ingredients that offer meaningful technical or creative potential for savory flavor development. We’re interested in their chemistry, sensory characteristics, functional benefits, formulation considerations and potential applications.

We welcome:

  • Technical explanations of ingredient functionality and sensory mechanisms.
  • Research-backed insights, including relevant published studies and experimental findings.
  • Practical formulation strategies and application-specific considerations.
  • Comparisons of approaches, including their advantages, limitations and trade-offs.
  • Case studies that demonstrate broader technical lessons rather than promote a particular product.
  • Expert perspectives on emerging challenges, unresolved questions and future opportunities.

Articles should offer actionable knowledge that readers can apply to their own formulation and product development work. Company or ingredient references may be appropriate where they support the technical discussion, but the editorial focus must remain educational and independent.

How to Pitch

Please submit a brief pitch to Jeb Gleason-Allured, group publisher ([email protected]) before preparing a full manuscript.

Your proposal should outline the article’s central argument, key technical insights, relevance to flavor chemists and product developers, and the expertise or evidence you would bring to the topic.

Please include a proposed title, author information and any relevant research, data or application experience that would support the article.

Pitch first; full manuscripts are due in December 2026. We encourage prospective contributors to get in touch as soon as possible to discuss their ideas and confirm editorial fit for the February 2027 issue.

We look forward to hearing from flavor industry experts with insights that can help advance the science and practice of savory flavor development.
