Highlighting trends in beverages and foodservice from the National Restaurant Association Show 2013, Euromonitor's foodservice industry analyst, Elizabeth Friend, said exotic flavor profiles are hot right now.
"One thing we’re seeing mostly in desserts is exotic flavor profiles: we’re seeing unexpected ingredients like taro root or green tea," said Friend (to view the complete video interview, click here). "In food, we’re seeing a lot of umami—that was really big here," she said of the trade show.
Jonas Feliciano, Euromonitor's beverages industry analyst, also said flavored aloe vera drinks are growing in popularity and single-serve coffee is becoming a key item in the industry (to view the complete video interview, click here).
