2-(Methylthio) Ethyl Acetate

RC Treatt’s 2-(methylthio)ethyl acetate (FEMA# 4560; CAS# 5862-47-5) is a colorless to pale yellow mobile liquid with a tropical, melon odor and flavor profile. Naturally occurring in fresh apple, melon and apple brandy, the material is used in tropical fruit and melon flavors at 1–5 ppm in beverages; 2–10 ppm in fruit ices and gelatin pudding; 0.01–0.2 ppm in fish and meat products; and 0.05–0.1 ppm in soups.
