Natural Advantage introduces natural 5-methylfurfural (FEMA# 2702, CAS# 620-02-0). This product can be used for coffee, roasted nuts, honey, caramel, tobacco and rum. Using 5-methylfurfural at 0.17 ppm gives a slight spice note, almost like cinnamon, which could be used to enhance spice notes. For sweet caramel flavors, try using this product between 10 ppm and 20 ppm. At 20 ppm, 5-methylfurfural tastes exactly like caramel with a very creamy mouthfeel.
