Ethyl 2,4-dimethyl-1,3-dioxolane-2-acetate
Source: Symrise
FEMA# 4294, CAS# 6290-17-1
Not naturally occurring.
Odor: @ 1%. Sweet, slightly anisic, fresh berry, green, fresh and becomes fruitier on the dry out.
Taste: @ 1 ppm. Slightly anisic, sweet and fruity. Perhaps a bit low.
Taste: @ 2 ppm. Anisic, berry, green, generic fruity, fresh lift.
Possible applications: This acetate is not heavily directional and therefore becomes a chameleon. The panel found anisic notes and therefore mentioned licorice and spice drops. However, the panel also mentioned red apple, plum, pineapple, berry profiles and citrus, thinking of a sweet profile in particular. We felt that this would lend powdery and creamy notes to certain profiles. Don’t forget the fresh lift mentioned above in the taste section so this could be added for that purpose.
