Citrus flavors are among the most popular in the food market and take the largest share of flavor in the soft beverage industry.
Cold Pressed Natural Citrus Oils
Citrus oils are usually produced by cold pressing of fresh citrus fruits. This process is very gentle with regard to chemical composition and the resulting freshly produced citrus oils possess aromatic qualities which are very true to nature in providing a complete olfactory impression of the citrus fruits.
Unfortunately, the exquisite aroma of cold pressed fresh citrus oils does last very long. All citrus oils contain large quantities (90-98%) of unsaturated hydrocarbons—predominately limonene, with small amounts of other monoterpenes and sesquiterpenes. The organoleptic impact of hydrocarbons is negligible. Their volubility in water is insignificant and they, in fact, represent an undesirable ballast in citrus oils.
