Mane has introduced a range of Asian-inspired marinades, to be used in meat and vegan applications.
Citing consumer demand for Asian flavors, Mane developed a range that includes Uzbek, Cambodian and Indonesian marinades. Per an Innova report cited in the press release, Asian flavor launches increased on average of 22% per annum for Eastern consumers between 2011 and 2016. To better understand consumer preferences, Mane used insight from a European survey about marinated meat. The survey also found that approximately two thirds of consumers selected at least one Asian flavor among the top five most appealing new flavors.
Mane's collection contains ten dry marinades in total, each containing free-from taste enhancers and nanoparticles. The range also includes profiles from Japanese and Peruvian cuisine.
Inspired by Asian cuisine—as well as fusion foods like Nikkei (a Japanese and Peruvian combination)—Mane's flavorist used different technologiesa to achieve natural profiles, including:
- Pure Capture, CE: This technology reproduces natural and authentic profiles that are created from traditional cooking methods, such as roasted meat.
- Sense Capture Umami: Similar to umami profiles, this solution is a 1:1 MSG alternative.
- Jungle Essence: Natural flavor profiles are obtained from raw materials using a supercritical extraction technique.
- Sense Capture Spices: A flavoring solution used to optimize spice impact.
“We did not want to include in our collection an umpteenth version of a five spices marinade or a sweet and sour marinade. Indeed, over the years we have witnessed that consumers have gained greater knowledge in Asian cuisine. This is why we wanted to recommend appropriate references that enable supermarkets to provide renewed ranges in store, as well as guaranteeing an authentic taste experience,” commented Fanny Dézert, meat business development and marketing manager for Western Europe.
