Flavor and fragrance manufacturer dsm-firmenich announced “Milky Maple” as the flavor of the year for 2025. This flavor combines the softness of milk with the natural sweetness of maple.

Maple is a staple flavor in North America, derived from the sap of select maple tree species. This natural flavor offers a sweetness with warm, earthy undertones and a deep brown color. Consumers have increasingly turned to maple as an alternative to traditional sweeteners. dsm-firmenich’s trend analysts have observed the increased appeal in maple flavors since 2019 as it becomes a versatile ingredient used in Europe and Asia. 

“Maple is going mainstream,” said Mikel Cirkus, senior director of foresight and design at dsm-firmenich. “Candy Cap Mushroom, a natural forest product with a distinctive maple aroma, is already prized by chefs as a flavoring for baked goods, ice cream, confectionary and even beer. This mushroom, part of the Milk Cap group, mirrors the appealing ‘brown note’ qualities of maple, satisfying consumer mood for food that is deeply entrenched in nature.”

Adding to the maple texture is the “creamy allure” of milk, which is also gaining popularity around the world. The analysts noted that milk appears to consumers’ feelings of nostalgia and simplicity.

Additionally, the Milky Maple flavor aligns with the Pantone Color of the Year 2025, Mocha Mousse (PANTONE 17-1230). Both the color and flavor of the year point towards the trend of indulgence and comfort. 

“As food and beverage trends shift toward comfort, nature and personal wellbeing, people are increasingly gravitating towards flavors that offer a taste of familiarity, balance and connection,” said executive vice president of taste, texture and health Maurizio Clementi. “‘Milky Maple’ delivers on this demand – it is a soothing embrace that draws people into a world of warmth and indulgence.”
