As flavor development becomes more global, regulated and science-driven, the International Organization of the Flavor Industry (IOFI) has introduced a new resource designed to help the industry speak the same language. The newly published IOFI Flavor Glossary compiles approximately 280 scientific, technical and regulatory terms commonly used across the flavor sector, creating a shared reference point for manufacturers, researchers, regulators and industry stakeholders.

Developed through a structured review process drawing on scientific literature, international standards, regulatory sources and industry references, the glossary aims to improve consistency in how flavor-related terminology is understood and communicated throughout the value chain.

The implications extend well beyond definitions. As companies increasingly collaborate across regions, regulatory jurisdictions and multidisciplinary teams, inconsistent terminology can create friction in product development, regulatory compliance, customer communication and advocacy efforts. A common vocabulary helps reduce ambiguity, improve efficiency and support clearer dialogue between industry and regulators.

The initiative also reflects a broader trend toward greater transparency and scientific rigor in the flavor industry. As emerging technologies such as precision fermentation, biotechnology, AI-assisted formulation and novel natural ingredients become more prevalent, the need for standardized terminology is likely to become even more important.

By positioning the glossary as a living document that can evolve alongside scientific advances and regulatory changes, IOFI is creating a framework that could help shape future discussions around flavor innovation, ingredient classification and global harmonization. For an industry facing increasing complexity, the glossary represents a foundational step toward clearer communication and stronger alignment across the global flavor ecosystem.
