Lavender aldehyde (BRI 857, CAS# 35158-25-9) offers a powerful, herbaceous character accompanied by hints of cocoa and lavender overtones – excelling in a variety of floral and gourmand compositions. In flavors, lavender aldehyde is particularly useful for adding authentic cocoa powder notes to chocolate applications, making them richer and smoother in nature; as well as a variety of fruits, including blueberry and cranberry. Fragrance use: excels in floral and gourmand compositions, specifically lavender and chocolate. Also great in fougere types.
