Givaudan has debuted Cardamom CO2 Absolute, a cardamom extract produced using a unique combination of methods to highlight its original olfactory profile with a new dimension. The product was created by Givaudan but is now part of the Albert Vieille product portfolio.
To preserve Cardamom’s original personality, Givaudan has chosen to source it from its native origin, Kerala in India, where local collectors harvest it with traditional know-how passed down from generation to generation. Believing that the right balance between nature and technology can help us find a sustainable path for our industry, Givaudan has collaborated with local partner to assist with spice processing through innovative technologies.
This Cardamom CO2 Absolute is designed to offer a fresh, spicy and slightly chocolate character demonstrating all its potential at the evaporation stage and ultimately evolving into a candied mandarin. Cardamom CO2 Absolute is said to reveal and highlight new facets thanks to a unique combination of extraction methods.
The cardamom fruit is processed as a whole seed and husk which is designed to add a unique richness to the CO2 absolute. It is then processed through CO2 extraction at low temperatures to preserve a more natural olfactory profile. The resulting CO2 extract is washed with ethanol to give it a sweet and slightly chocolate note and to remove the insoluble molecules.
