But as every flavor chemist and food scientist knows, adding fiber is the easy part. Making it taste great? That’s where the real work begins.
Fiber brings baggage: off-notes, dryness, chalkiness, grittiness, viscosity shifts, sweetness modulation, flavor scalping and shelf-life instability. Different fibers—soluble, insoluble, resistant starches, inulin, oligosaccharides—each come with their own sensory and formulation quirks.
