Zingerone (FEMA# 3124, CAS# 122-48-5), also known by synonym vanillyl acetone, can be used in a range of fragrance and flavor applications. For flavor products, it can be used in vanillin imitations, fruit flavors, root beer, spice blends, finger and tobacco flavors. For fragrances, it can be used as a sweetener and blended with ylang-ylang and gardenia notes.
