What if flavor development could start with an emotional or cognitive goal rather than a taste profile? That is the premise behind IFF’s Mood Intelligence platform, which combines consumer research, sensory science, behavioral measures and neuroscience to investigate how food and beverage experiences connect with emotions and cognitive states. A newly granted patent for the company’s BrainEmotions methodology takes that concept a step further, potentially moving mood-driven flavor development from validation toward prediction and design.

The move comes amid a rise in mood-focused fragrance innovation.

The patented approach comprises a method for linking ingredients and flavors with patterns of brain activity associated with specific emotional and cognitive benefits. IFF says its researchers have built relationships between targeted benefits, the brain networks associated with those benefits and the neurological activity observed when an ingredient or flavor produces a relevant response.

The distinction is important for flavorists and product developers. Neuroscience has increasingly been used to validate sensory experiences after they have been formulated. IFF is positioning BrainEmotions as a tool that can also help determine what to formulate in the first place.

One component, Flavor Feelings, maps relationships between flavors and emotional responses. The database draws on research across countries and cultures to identify associations between specific sensory experiences and desired emotions.

For example, if research shows that a particular flavor profile has a strong association with happiness, that relationship can give a flavorist a starting point for development. BrainEmotions adds another layer by examining relevant brain activity rather than relying solely on what consumers consciously report.

The two approaches therefore serve different functions: Flavor Feelings helps identify flavor-emotion associations, while BrainEmotions investigates those relationships through neuroscience. IFF says their convergence can provide a stronger evidence base for product development.

The potential shift for flavor development is significant. Instead of creating a flavor and asking consumers afterward whether it generated the intended emotional response, developers could begin with the experience they want to create.

What does the target consumer want to feel? Which flavors have demonstrated associations with that state? Which ingredients have produced relevant neurological responses? How might those relationships change according to culture, geography, occasion or application?

Those questions can then inform the flavorist's creative work.

IFF describes this as moving Mood Intelligence upstream—from a final validation step to an early-stage product design tool. Its research spans beverages, dairy, confectionery, culinary products and other food and beverage categories.

Importantly, the approach does not reduce flavor creation to a database-driven exercise. IFF's Mood Intelligence framework combines data with the creative work of flavorists, who can use the findings to select and combine ingredients in pursuit of a particular sensory and emotional outcome.

The company's broader platform says flavorists can work with combinations of proprietary ingredients, natural molecules and botanicals to create distinctive profiles. Examples include adding lively green basil notes to strawberry for a more energized impression or using pine-like juniper notes with apple to support an association with happiness.

IFF says its Mood Intelligence work represents more than 25 years of research, with 2.5 million consumer observations, a global database covering 34 emotional clusters and multiple proprietary testing methodologies. The platform combines explicit consumer responses with implicit neuroscientific data to build a fuller picture of sensory experience.

That breadth could become increasingly relevant as food and beverage companies look beyond traditional hedonic measures such as liking and purchase intent. A product can perform well on taste and still fail to deliver the emotional territory its branding promises. Conversely, an unusual flavor combination could become more compelling if it supports a clearly defined consumer experience.

The new BrainEmotions patent points toward several potential changes in the way mood-oriented products are developed:

  • More intentional briefs: Flavor projects could increasingly begin with an emotional or cognitive objective alongside traditional taste, cost and technical requirements.
  • Data-informed creativity: Flavorists could use consumer and neuroscience data to narrow potential flavor territories without eliminating the creative experimentation at the heart of formulation.
  • More nuanced claims: Linking sensory experiences to measurable neurological responses could eventually provide a stronger scientific basis for products positioned around mood or cognitive experiences, although any consumer-facing claims would remain subject to regulatory requirements.
  • Greater localization: Because emotional associations can vary across cultures, geographies and occasions, mood-driven flavor development may require more region-specific sensory intelligence rather than assuming that a single flavor-emotion relationship translates globally.
  • A broader definition of product experience: The work also reinforces a larger industry shift in which flavor is being considered not simply as a taste-delivery mechanism but as part of a product's overall experiential design.

The bigger idea is that flavor could become something developers design toward a feeling, rather than simply a taste. If neuroscience, consumer research and flavor creation can increasingly work together, the emotional experience of a food or beverage may become another design parameter alongside sweetness, acidity, aroma, mouthfeel and appearance.
