Addressing Oil Solubility and Creating Stable Flavors


Whether it's on the retail shelf or the digital shelf, flavor stability is always an area of opportunity for innovation in food and beverage. Yvonne Jin, principal technologist for Ingredion, will be presenting at Flavorcon 2018 on the challenges and solutions to creating oil soluble flavors. 

During her “Design and Deliver Stable Flavors” presentation, she will examine the technical considerations in selecting ingredients for stable flavor emulsions and encapsulants and some of the materials that are currently available. Additionally, she will discuss the challenges of delivering flavors through liquid emulsions and powder formats
