"Loaded with flavor" is a phrase the inventors at Pepsico meant literally when they developed this aerogel invention. It is capable of carrying high flavor loads, helped by supercritical CO2.

In this patent application, food grade aerogels are used for the impregnation of flavor with the help of supercritical carbon dioxide.
According to the inventors, the aerogels possess high flavor-loading capacity, up to ~70%, which is well above the average loading capacity of most common flavor encapsulation technologies via spray-drying (typically ~20% capacity loading).
In addition, the technology is said to maintain the integrity of flavors, particularly top notes.
