Linalyl acetate (3,7-dimethyl octa-1,6-dien-3-yl acetate), (FEMA# 2636, CAS# 115-95-7), comes to mind primarily as a fragrance ingredient. The character is instantly recognizable as one of the key building blocks of cologne, but the bright bergamot aroma of this raw material is also useful in a wide array of flavors. The most obvious home for this ingredient is a key component of tea flavors, but more subtle additions can brighten creations across the board.
Note that the dose rates given throughout this article are the levels suggested for use in flavors intended to be dosed at 0.05% in ready-to-drink beverages or in a simple bouillon.
