According toĀ Innova Market InsightsĀ a poll taken among consumers discovered that the number oneĀ chocolate consumption driver is taste, which is the top response in most countries. Top purchase drivers for consumers of chocolate are to make themselves happy (55%), to indulge (40%), to treat or reward themselves (36%), or to relax and wind down (33%).

The British Society of Flavourists (BSF) honorary president/senior flavorist at esarom, Andrea Albertino (pictured below), will be taking the Flavorcon stage for the first time ever to discuss innovative ways to construct chocolate flavors.
The purpose of Albertino'sĀ session is to present a set of raw materials/preparations that you would probably not think to use in formulating a chocolate flavor. HeĀ wants to demonstrate that these components, even though quite unusual, can bring a positive twist.
The idea is to present a simple chocolate flavor on smelling strips and compare it with the same flavor where every single component has been added on top.Ā

Flavorists, get your education started early with this first-come first-served pre-FlavorconĀ session on Monday, October 7! This session will take attendees on a guided tour through a lineup of organoleptic materials with the help of Bell Flavors & Fragrances principal flavorist, Cynthia Lipka, and junior flavorist Michael Morrison as well as a second session featuring independent flavorist and āFlavor Bitesā columnist, John Wright and a flavorist from PepsiCo. This session has an additional fee and lunch is included!
