The Flavor and Extract Manufacturers Association (FEMA) gathered in West Palm Beach, Florida, to celebrate a century of progress in the science, safety and quality of flavors. While recognizing past successes, delegates also focused on the challenges ahead: a possible future shortfall in vanilla crops, emerging flavor technologies and international regulatory pressures.
