Allyl isothiocyanate (FEMA# 2034, CAS# 57-06-7) is a perfect example of the dramatic difference concentration levels make. The pure chemical seems entirely at home in a chemical warfare scenario. Diluted many, many times, it adds a lovely tang to sushi or roast beef. This might encourage us to comfortably pigeonhole this raw material into mustard and related profiles. This is far from the limit of its capabilities. At even lower levels, it can brighten a wide range of fairly unrelated flavors.
