Onego Bio to Open Egg Protein Manufacturing Facility in Jefferson County, Wisconsin

On March 12, 2025, ingredient company Onego Bio announced that it will become the second tenant of Jefferson County’s Food and Beverage Innovation Campus in Jefferson County, Wisconsin. The company purchased 25.9 acres within the campus to build a flagship manufacturing facility for egg proteins.

According to the company’s press release, the proposed site will be dedicated to producing Bioalbumen, a fermentation-derived egg protein powder. The site will combine Onega Bio’s bioprocessing techniques and large-scale manufacturing with an expected opening date in 2028. 

“At Onega Bio, we are committed to building a more resilient, sustainable food system – one that ensures stability for manufacturers, reduces supply chain volatility and supports long-term food security,” said Maija Itkonen, co-founder and chief executive officer of Onega Bio. “This region offers the right combination of infrastructure, logistics and proximity to key partners to help us scale Bioalbumen and bring its benefits to more customers. We’re thrilled to join this thriving hub of food and beverage innovation.”

Onega Bio joins Kikkoman on the Food and Beverage Innovation Campus in Jefferson County. Further, resident company Nestlé Purina announced a $195 million expansion of its existing facility. City officials hope these investments will solidify Jefferson County as an innovation hub for the food industry.
