Food and beverage market research company Datassential released its 2025 trend report, with trends for both the upcoming year and beyond. 

The report describes flavors that will influence the coming year in the food and beverage industry as well as cuisines that are gaining popularity. Datassential named Haitian cuisine as its 2025 global cuisine trend, with 34% of U.S. consumers surveyed interested in trying Haitian foods.

“As we enter 2025, these trends and flavors promise to shape menus, inspire innovation, and meet consumers both where they are and where they’re going,” said Samantha Des Jardins, content marketing manager at Datassential.

Top 10 Flavor Trends for 2025

Pastina: A category of small pasta shapes commonly used in soups.

Sweety Drop Peppers: These are small, tear-shaped peppers from Peru known for their sweet flavor and mild heat.

Chow Fun: A Chinese dish that traditionally consists of stir-fried rice noodles, a protein, veggies, and a soy-ginger sauce. 

Pikliz: A spicy, pickled condiment from Haiti made with onions, carrots, cabbage, bell peppers, Scotch bonnet peppers, spices, and vinegar. 

Orange Wine: Also known as skin-contact wine.

Yerba Mate: A South American herbal tea made with dried evergreen tree leaves.

Bonito Flakes: Made from filleted, dried, fermented, smoked skipjack tuna and shaved into flakes.

Saffron: A spice that imparts a bright yellow color to foods and beverages.

Next-Level Fat Washing: A cocktail-making technique using fat infused with alcohol, then frozen.

Short Ribs: Cuts of beef taken from the lower rib area

Five Trends for the Future

Salted Egg Yolk: Made by preserving eggs in a salt brine.

Suya: Spicy meet skewers from Nigeria made with a ground chile, ginger, garlic, onion, salt, and peanut spice blend. 

Root Afza: A South Asian herbal syrup made from a blend of fruits, vegetables, rosewater, water lillies, and herbs. 

Sansho Pepper: A spice made from the peppercorns of a Japanese pepper plant.

Ras Malai: An Indian dessert made with soft, spongey cheese soaked in milk flavored with aromatics.
