Our newly added ethyl 3-methyl-2-oxopentanoate (FEMA# 4903, CAS# 26516-27-8) is nutty, brown, woody, walnut hulls, fruity and cheesy on dry out. At higher usage, it’s well suited for adding earthiness and realism to nut flavors, especially black walnut. At lower levels, it adds overripe notes to fruits and cheese flavors.
