Taste: @ 0.3%. Astringent, floral, sweet, fruity, green and berrylike.
Possible applications: The sweet, fruity notes of this extract will stand alone nicely in a beverage application. In other flavors, it will add depth, especially in pomegranate, raspberry, blueberry, cherry and red wine.

Possible applications: Some versions of this essential oil have been described as dirty hair-like and wet dog. This particular product has less of the objectionable notes and more of the delicate, waxy notes and will be appreciated in raspberry, cranberry, cherry and other red berry flavors. At levels lower than 1 ppm it might be used to accentuate fatty, waxy notes in cheeses like Manchego, Parmesan Reggiano and Chevre.

Possible application: Most roasted, brown flavors will benefit from the use of this pyrazine including cocoa, dark chocolate, coffee, mocha, peanut, hazelnut, baked potato, tobacco, grill, roast beef, chicken and pork.
