The craft beer market has been a growing springboard for interesting flavors and beverage innovations. At Flavorcon 2018, the flavor industry will take a closer look at this growing area with a presentation from Shane McDonald, principal flavor chemist for Kalsec.
During his presentation, “Craft Beer Flavor Infusion,” he will discuss the growing alcohol infusion trend and how it is innovating flavors inside and outside of the beer segment. McDonald will also detail the science and benefits of creating these flavors without alcohol and some of the challenges in the chemistry.
“Craft beer has excited consumers, and product developers want to incorporate craft beer flavor into their new products,” said McDonald. “This presentation discusses the flavor chemistry of craft beer, the difficulties of using craft beer in processed foods and how to develop craft beer flavors”
