Flavorcon 2022 is approaching, are you ready? Perfumer & Flavorist+ (P&F+) has compiled a line-up of sessions that offer attendees gems to add to their toolbox.

Scheduled for November 9-10 in Cincinnati, OH, flavor experts will assemble from around the world to discover the latest insights from industry professionals.

Leading up to Flavorcon, we will share session and speaker details. One of which is "Bitter Suppression – Functional Flavors Part of the Puzzle," featuring Kathryn D. Deibler, Ph.D., Haleon principal scientist, flavors. 

Session details: 

In light of bitterness usually being a negative flavor characteristic, several approaches to bitter suppression will be reviewed. Functional flavors reduce bitterness using two primary mechanisms of action – select receptor blocking and psychophysics mixture suppression. Since receptor-blocking molecules are selective for bitter receptors, (and bitter molecules are also selective), the right functional flavors need to be used.
