Odor: @ 100%. Dark, cocoalike, slightly smoky, coffee liqueurlike and brown.

Taste: @ 0.2%. Roasted, cocoalike, smoky, mochalike, slightly ashy and brown.

Possible applications: The dual nature of this distillate makes it a good consideration for dark chocolate and/or cold-brew type coffee flavors. It will also perform nicely in flavors for alcohol like whisky, liqueur and beer.

Possible applications: The cooling, spicy notes of this essential oil will add character to black pepper, nutmeg, clove, cinnamon, ginger and other spice flavors. Citrus flavors, especially lime and lemon, as well as some tropicals like green mango and kiwi will also be enlivened with its use.

Possible applications: The sweet, fruity notes of this acid will add an almost maltol-like quality to fruit flavors, but especially berry flavors like strawberry and raspberry. It will also be appreciated in tropicals like cherimoya and papaya. Cheese with fruity notes like parmesan are also good applications for this material.
