As consumers continue to look for products with more benefits and unique flavors, many are looking for products created with superfoods. At Flavorcon 2018, the flavor industry will get a perspective on just how to create these flavors with a presentation from Danny Hodrien, managing director and chief flavorist for F&F Projects Ltd.

During his presentation, “Volatile Flavor Compounds of Latest Superfoods,” he will examine the volatile flavor compounds of two popular superfoods, Maqui berries and watermelon seeds, through using GCMS and solid phase microextraction. Additionally, he will review compounds of flavor significance and demonstrate several flavor formulations.
