As A.I. and other technologies become more advanced and available, the flavor industry is investigating its uses and applications to innovate faster and more effectively. At Flavorcon 2018, one presentation featured a demonstration on the emerging field of digital flavors and its future within the industry.
To discuss this topic, Nimesha Ranasinghe, Ph.D., assistant professor of the School of Computing and Information Science at the University of Maine, presented his research in digital flavors on the Innovation Stage. In contrast to traditional liquid or powder flavors, digital flavors use virtual and sensory information to provide the taste sensation.
