As technology increasingly influences the flavor industry, it is also providing innovative and new ways of providing consumers with fulfilling tastes. Digital and virtual flavors attempt to deliver taste through technology as opposed to traditional powders or sprays. To discuss this emerging area, Nimesha Ranasinghe, Ph.D., assistant professor of the School of Computing and Information Science at the University of Maine, will be presenting his research on the Innovation Stage at the 2018 Flavorcon.

During his “Augmented and Virtual Flavors” presentation, Ranasinghe will discuss the growing interest in incorporating digital flavor technologies into traditional eating and drinking experiences. He will also share insight into his research with virtual and augmented flavors, which includes the invention of a pair of chopsticks that stimulates the taste of saltiness through a gentle zap.
