Sensory Properties of Optical Isomers
The sensory properties of a series of volatile enantiomers, which are important in flavors and fragrances, will be discussed in this article.

Enantiomeric Odor Differences and Gas Chromatographic Properties of Flavors and Fragrances.
Enantiomers of flavors and fragrances show characteristic differences in odor and taste; thus, the enantiomer composition is an important property that should be determined by analytical resolution on a chiral stationary phase in gas chromatography.

Comparative Investigations of the Essential Oil and Volatiles of Spearmint
The objective of this work is to identify the fragrance compounds of this oil and its SPME-headspace by means of gas chromatographic- spectroscopic (GC and GC/MS using different polar and chiral phases) and olfactoric methods (GC-sniffing technique and olfactory correlations) to find out the importance of each single constituent with their specific odor attributes, responsible for the characteristic and pleasant spearmint aroma for the first time.

Spray Drying of Food Flavors. Ill. Optimum Infeed Concentrations for the Retention of Artificial Flavors
The practical aspects of this work are that each flavor encapsulating material will exhibit an optimum concentration for flavor retention. The optimum concentrations determined in our study may not necessarily be the same as in a production facility. This would have to be determined using actual production equipment. If the retention is limited by the ability to atomize, this factor is equipment dependent. It does appear worthwhile to make this determination, however.

Endpoint: Safety for All Means Accounting for Human Nature
When testing fragrance and flavor safety, predictive models can be used to determine the probability for a reaction. This Endpoint reviews some of the literature in an effort to improve safety testing of F&F materials.

Progress in Essential Oils: Sweet Fennel Oil and Extract
In this column, Brian M. Lawrence reviews the composition of sweet fennel oil and extract as found by various researchers. For example, a commercial sample of sweet fennel oil was screened for its anti-platelet activity by Tognolini et al. (2006) and Guerini et al. (2006) using GC-FID and GC/MS. Results are reported herein.
