Zingerone (FEMA# 3124, CAS# 122-48-5) is a strong, aromatic, sweet-spicy crystalline material that is primarily derived from vanillin. Its heavy odor and flavor are quite useful at supplementing blackberry, hazelnut and vanilla profiles. In fragrance, zingerone can be used to warm or sweeten notes such as jasmine, tobacco and leather.
