Tiglic acid (FEMA# 3599, CAS# 80-59-1) naturally occurs in celery leaves and stalk, cocoa, mango, dried bonito and Roman chamomile oil. The odor is sweet, dry, spicy, woody and caramel. The flavor is sweet, brown, fruity, with ripe and jammy nuances. Suggested applications include caramel, bread, fruity and jammy flavors.
