Dr. John Cavallo is an accomplished executive with a global business background in flavors, food ingredients and nutritional products. John previously held senior management positions at two related firms: chief technology officer at Citrus and Allied Essences and vice president of global business development and a member of the board of directors at Trilogy Essential Ingredients. John has also managed Trilogy Flavors Shanghai, Ltd for the last five years, and managed Symrise’s global business segments.
On the technical front, John has been involved in microemulsion and nanoemulsion development for over 25 years and continues to work in the field today. He has published a significant number of professional and technical papers in the field of surface chemistry with a focus on emulsions and microemulsions. His recent work is in the area of flavor stabilization, bioavailability and oxygen transport. John holds an MBA in marketing and finance and a Ph.D. in physical chemistry. He is a member of the American Chemical Society, the Institute of Food Technologists, and serves as the president of the Flavor and Extract Manufacturers Association.
