In quoting Hans Christian Anderson on its Web site, Copenhagen-based Danisco makes clear the connection between flavor and the psyche. And in respecting the importance of this segment of its business, the company has formed a flavor and fragrance ingredients sector within its flavors division.

“Danisco has been selling flavors for many years, mainly dairy flavors,” says Germain Despres, vice president. “The flavors acquisitions made since 1997 [Borthwicks, Beck Flavors, Cultor Food Science, Flavoring AB, Flavor Tech Corp., Calchauvet, Florida Flavors and Perlarom] have brought the necessary critical mass required to form a flavor division and provide a platform for future growth in this sector.”
