Kabosu (FEMA# 4864, CAS# 2182693-25-8) is a Japanese citrus with an extraordinarily rich and sour aroma. Its sharp, acidic, slightly sweet top note is sometimes compared to vinegar, which makes it a popular component of salads and sauces. Kabosu oil also pairs well with ingredients such as ginger, garlic and mint.
