Vinylguaiacol natural (FEMA# 2675, CAS# 7786-61-0) contributes essentially to flavors like chocolate, vanilla, distilled spirits and coffee. In coffee flavors, it adds slight spicy nuances and harmonizes exaggerated sulfur and burnt notes. It also provides a sweet, rich, red apple taste. We recommend a use level in food of 50 ppb to 20 ppm.
