Caramel acetate (FEMA# 3797, CAS# 4166-20-5) benefits most sweet and brown flavors. It adds ripe and fruity notes to red-fruit-flavors and sweet caramel connotations to vanilla, nuts and chocolate flavors. Meat flavors appear more roasted. It adds fullness and body, complementing sweet and savory flavors. It also offers good stability and easy handling.
