Natural esifurane, also known as 2,5-dimethyl-4-ethoxy-3(2H)-furanone, (FEMA# 4104, CAS# 65330-49-6) is more sugar-like than strawberry furanone or mesifurane. It enhances both sweet and savory, as well as amplifies sweeteners. Esifurane works best with other sweeteners to improve sugar likeness. It can be described as sweet, fruity and caramel, with berry notes. Esifurane has also been described as having the aroma of a bowl of sugar. It has superior oxidative stability in spray-dried formulas. Esifurane occurs naturally in coffee, grape, strawberry and other fruits. Flavor use level: 0.1 ppm to 1 ppm in finished goods. E.U. and U.S. natural, kosher.
