Excellent diffusive power and superb odor tenacity make the celery seed oleoresin a distinguished ingredient in perfumery compositions; splendid effects are achieved with very small amounts. One can use oleoresins for flavoring foods depending on “whether an oil rich in volatiles or a milder flavoured product is required”.

Progress in Essential Oils: Carrot Seed Oil
The oil of carrot and carrot seed has been the subject of a number of studies. This article reviews the results of several, including: hydrocarbons characterized in the leaf headspace; the chiral analysis of five constituents found in the headspace; GC/MS findings in a commercial sample of carrot seed oil; GC-FID and GC/MS analyses of oils from ‘Perfkcja,’ ‘Koral’ and ‘Dolanka’ cultivars; and others.

Vanilla flavor is dominated by phenols and their transformation products mostly derived from enzymatic hydrolysis of the phenyl-β-D-glucosides. Cocoa bean flavor is dominated by Strecker aldehydes and pyrazines and other products generated during the roasting process of the beans.
