According to the present inventors, existing coffee whiteners including soy milk or a soybean protein isolate have an insufficient rich or mild taste required for coffee whiteners. And in some cases, the green-bean flavor peculiarity of soybeans may affect the product. Therefore, a plant-source coffee whitener having a satisfactory taste is still sought.

Described here is a coffee whitener having a rich taste and good flavor that is prepared by using, as a starting material, a soybean emulsion composition. Said composition has a protein content of 25% w/w or more on a dry basis. It also has a lipid content—expressed in the amount of an extract obtained by using a solvent mixture consisting of chloroform and methanol—of 100% w/w or more relative to the protein content, and an LCI value of 60% or more.
