Organoleptic Characteristics of Flavor Materials

Penta Manufacturing Co.'s cyclohexylethyl acetate, FEMA# 2348, CAS# 21722-83-8 occurs naturally in passion fruit. Its odor at 100% exhibits a sweet, solventy and fruity scent. Taste at 2 ppm is characterized by a slightly fruity and green flavor. Taste at 5 ppm is characterized by a fruity, berrylike, slightly earthy and sweet taste. This early FEMA compound is noncharacterizing on its own, but can contribute as part of the ester complex in fruit flavors, especially berries.
