In this monthly column, senior flavorist Judith Michalski describes the odor, taste and suggested applications for several materials.

Penta Manufacturing Co.'s cyclohexylethyl acetate, FEMA# 2348, CAS# 21722-83-8 occurs naturally in passion fruit. Its odor at 100% exhibits a sweet, solventy and fruity scent. Taste at 2 ppm is characterized by a slightly fruity and green flavor. Taste at 5 ppm is characterized by a fruity, berrylike, slightly earthy and sweet taste. This early FEMA compound is noncharacterizing on its own, but can contribute as part of the ester complex in fruit flavors, especially berries.

This edition features discussions on dibenzyl ether, cis-4-Heptenal, heptyl cinnamate, jasmolactone extra C, mandarin oil green 4 fold, 2-methoxy-3-(methylpropyl) pyrazine, methyl-3-hydroxy hexanoate, orange oil sesquiterpeneless MCC and vanilla 25 fold.
