Taste Advantage Introduces Whey Flavor Masking Ingredient

Taste Advantage LLC (Lakeland, Florida) has introduced Whey Masker-1, a kosher and GMO-free natural ingredient that has been formulated to help overcome the dry, rough puckering sensations often associated with the consumption of whey protein in high acid beverage applications.

Generally seen as a good source of protein, whey is more water soluble than casein protein. It is often preferred over other sources of protein in applications such as high-acid and hot-packed beverages because it remains clear and is relatively stable in heat at low pH. According to Brian Byrne of Taste Advantage, “As the pH decreases, the astringency of the whey protein increases. The astringent taste does not usually mix well with the majority of ‘sweet’ flavored beverages in the market.”
