Citromax Hires John Cavallo for Senior Management Position

Citromax has announced that John Cavallo, Ph.D., has joined the company as its senior vice president of technology and commercial development.

With over 25 years of food and beverage experience, Cavallo has operated in senior management positions for Trilogy Essential Ingredients, Citrus and Allied Essence, Comax Manufacturing, Symrise, Haarmann & Reimer and Givaudan. He received his Ph.D. in physical chemistry, surface and colloid science from the City University of New York and an MBA from the New York Institute of Technology. In his new role, Cavallo will interact with R&D and flavor departments and senior management to grow the scope of the company’s business and find new opportunities in the global food and beverage market.  

In addition to his work history, Cavallo was elected to FEMA’s board of governors in 2009 and was later made the organization's president. From October 2016 to May 2018, he served as the president of the Flavor and Extracts Manufacturers Association (FEMA), where he oversaw significant changes to the organization's operations and strategic vision. In addition to his involvement with FEMA, he is a member of the American Chemical Society, the Institute of Food Technologist and the National Association of Flavors and Food-Ingredient Systems (NAFFS) and serves on the advisory board for Perfumer & Flavorist magazine.
