DairiConcepts Debuts Ascentra

DairiConcepts (Springfield, Missouri) announced its introduction of Ascentra, a powdered ingredient that can lower sodium content by 25–50% in a broad range of food systems. It does this by boosting salt perception, savory nuances and umami effects, and it was created to meet the increasing need of food manufacturers to reduce the sodium content in the foods yet offer full flavors. Made from a proprietary, milk-based fermentation process during a five-year period, Ascentra was developed to include kosher and EU-certified versions of its base products, which are available on maltodextrin or nonfat dry milk carriers.
